New Potato Salad

 

2 cups new potatoes, diced

½ cup finely diced red onion

¼ cup finely diced green pepper

¼ cup finely diced red bell pepper

¼ cup minced scallions

¼ cup finely diced celery

1 tablespoon chopped fresh thyme

1 tablespoon Worcestershire sauce

2 tablespoons horseradish

½ cup mayonnaise

1/8 cup Dijon mustard

¼ cup crisply cooked bacon, chopped

salt and pepper to taste

cayenne pepper to taste

 

Steam potatoes until tender and put in a warm oven to dry. Sauté all vegetables and thyme until softened; add potatoes. Mix all wet ingredients well, and add to potato mixture; toss to coat. Stir in bacon and season to taste.
